Lo Carb, Hi Protein Superfood Pancakes

  • Hello Everyone!

    This post will differ from my usual rhetoric, but at the insistence of my friends, I decided to share with you an amazingly simple breakfast alternative for those seeking a healthier alternative to the usual pastry, without compromising the taste. This is seriously a guilt-less meal that can be enjoyed at any time of day. It was actually perfected by my sister Aleksandra, after my many clumsy tries with a variety of ingredients.

    All righty, here it goes!

    You will need the following 4 ingredients:

    1. 1 scoop of Amazing Grass Meal Original Protein Mix. I tried many protein variations, but this one is the best in terms of taste, texture + ease of cooking, read: the pancake will come out in one piece instead of scrambled! Amazon has the best price on it, as it can run pretty pricy, though you might be lucky finding a better bargain – if so, let me know!
    2. 8 tablespoons of liquid egg whites. Try going for cage free and/or organic, if possible.
    3. 1 teaspoon of coconut oil (or another kind, if you prefer)
    4. Cinnamon

    Mix the dry ingredients – the protein and the cinnamon – in a round bowl…

    Add the eggs whites and whisk well…

    In the meantime, heat the oil on a pan turning the heat on high.

    Side note: I use ceramic pan to avoid the badness surrounding the usual non-stick varieties. The cool thing is that this one is a non-stick as well, but without the harmful effects of teflon : )

    And once the oil is hot, pour the mixture into the pan…

    Wait for about 3 minutes, and/or until you can see bubbles forming on the pancake…

    Turn the pancake over, turn off the heat and let it cook for another 3 minutes or so.

    In the meantime, if you desire so, you may prepare a little yoghurt dressing for your meal. I like to use unsweetened coconut yoghurt. I personally avoid dairy but you may like plain greek yoghurt), a little tiny bit of stevia to taste and yes, more cinnamon!

    Mix all the ingredients in a cup and stir…

    Take your pancake off the pan and dress with the yoghurt, and enjoy without remorse.

    Approximate macro breakdown per one pancake, without the yogurt: Carbs: 9g (6g of it is fiber!), Sugar: less than 1g, Protein: 23g, Fats: 8g

    The yogurt alone (approx. amount as shown in the pictures): Carbs: 3g (half of it is fiber!), Sugars: less than .5g, Protein 0g, Fat 2g

    Not to mention all the goodness in the Amazing Meal you get: wheatgrass, kale, barley grass, alfalfa, acai berry, mac, flax seed, quinoa protein, pumpkin, enzyme blend, the list goes on…
